Simple Seafood Chowder
A soup that lends itself to as many tasty variations as there are fish in the sea.
Ingredients
Butter
Diced onion
Minced garlic
Chopped carrots
Diced potato
Your preferred seafood seasoning blend
White wine (optional, but nice to have)
Chicken bone broth or fish broth
Seafood— Could be fresh shrimp, crab, or fish, or canned tuna, herring, salmon, oysters, or clams. I’ve even included octopus. Mix and match with whatever you want!
Dairy for creaminess— I’ve used heavy cream, raw milk, sour cream, and Greek yogurt and enjoyed them all.
Fresh parsley for garnish
How To
Heat the butter in a big pot on medium-high heat.
Add the onion, garlic, carrots, and potato. Stir every minute or so, for about five minutes, until the onions are translucent and the root vegetables are partially cooked.
Add some seafood seasoning— a light dusting over everything.
Add a generous splash of wine, scraping the bottom of the pan to loosen any stuck bits.
Add your broth. Bring to a boil and allow the potatoes and carrots to cook the rest of the way.
Add your seafood. If you’re using fresh seafood, let it boil until cooked.
Add your dairy— enough to make the chowder creamy.
Season your chowder with any additional sea salt or seafood seasoning you desire.
Garnish with fresh parsley or if you like, and serve with some good crusty bread.
Notes
As always, amounts of each ingredient will vary based on your family’s size, needs, and tastes.
Seafood is an incredible source of protein, essential fatty acids, vitamins, and minerals, making it one of my favorite nutrient dense foods. Bone broth, butter, and dairy (whichever option you choose) add even more gorgeous nutrient density to the mix!
This meal has a nice macronutrient balance to it, but you can adjust it in various ways. For example, using Greek yogurt will emphasize protein, and using heavy cream will emphasize fat instead. Heck, use both if you want! That sounds pretty good to me.
