Ingredients
1 lb organic pasta, cooked and drained
1/4 c reserved pasta water
2 T grass fed butter
8 oz cream cheese
1/2 c whole milk
1/2 tsp white pepper
3/4 tsp natural salt
1 tsp spicy mustard
2 c grated sharp cheddar cheese
Instructions
Preheat the oven to 375° and cook your pasta, reserving the pasta water.
In a medium saucepan, melt the butter and cream cheese over medium low heat.
Once melted, whisk in the reserved pasta water, milk, mustard, salt, and white pepper.
Stir the cooked and drained pasta into the cream cheese sauce.
Add the grated cheddar cheese, stir until combined, and put the whole mixture into a buttered 9x9 glass baking dish.
Optional: Top with more cheese. More grated cheddar is a good option. I also love to add a layer of thinly sliced brie (amazing).
Cover the dish with foil and bake for 20 minutes.
Remove the foil and bake another 10 minutes.
Allow it to sit for about 10 minutes before serving.

Notes
This is no low calorie food. This is the height of decadence. The richest of the rich. Approach it with care. ;) If you would like to make it less rich, you can always reduce the cream cheese a bit and replace it with milk or cream. Or vise versa.
Processed mac & cheese was a staple of my childhood.
When I started getting health-conscious in my early teens, reading ingredients and cutting out processed foods, I didn’t want to give up my oldest comfort food.
Today, I make it a point to make all of the comfort foods— but with real, nourishing ingredients. Conventional wheat products are terrible for you, but organic and non-GMO wheat is alright for most people. I’ve had a similar experience with dairy— organic and grass fed are received much better by my body (and are much richer in nutrients) than conventionally produced dairy products.
If you have been eating clean and healthy, but have a particular comfort food that you miss… I challenge you to make it from scratch with the best quality ingredients you can get your hands on.
A nourishing diet is more than just a “clean” one— it’s a rich and enjoyable one.
