Ingredients:
2 tbsp butter
1/2 c. onion, diced
3 cloves garlic, minced
1 lb. meat, either chopped up finely or ground (cooked or uncooked is fine)
2 c. frozen mixed vegetables (I like the mix of organic carrots, peas, corn, and green beans that Costco sells) OR diced carrots, peas, and any additional vegetables you like in your pot pie.
1/4 c. organic flour
1 pint bone broth
1/2 cup heavy cream
Salt and pepper
2 pie crusts (the linked recipe is for a double crust!)
Instructions
Preheat oven to 375°.
Roll out your two pie crust; set one aside for the top crust, and prepare the other in a 9” pie pan.
Heat a large saucepan over medium high heat, and sauté onions and garlic in butter.
Add meat and cook thoroughly (if not already cooked).
Add mixed vegetables and cook for about 10 minutes, until no longer frozen and partly cooked.
Season with salt and pepper to taste.
Add flour and stir it in for a minute or two.
Add bone broth and heavy cream. Cook, stirring constantly, until the gravy thickens— about 10 minutes.
Spread the mixture evenly in the prepared pie crust and top with the other pie crust. Pinch the edges of the crusts together and make them look as pretty as you please. Poke a few holes in the top for steam to escape.
Bake your pot pie for 30-45 minutes, or until the crust is golden.
Allow to cool for about 10 minutes. Enjoy!
Notes
This recipe takes about 90 minutes to make.
It can be adapted to any pan or skillet, so if you have a larger family, just scale it up.
As always, the better your ingredient quality, the more nourishing the food will be! I love using grass fed butter, organic/grass fed meat, bone broth, and cream, and organic veg.
